Roasted Corn
1 stick butter, melted
1 tablespoon freshly squeezed lime juice
1/2 teaspoon lime zest
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 cup chopped fresh cilantro
12 ears fresh corn, shucked
Combine the butter, lime juice, lime zest, sugar, salt, and cilantro in a medium bowl and mix well.
Grill the corn on a medium-hot grill for 10 minutes, turning occasionally (use tongs so you don't suffer like Charles does!).
Transfer the lime-cilantro butter to a serving bowl and serve with the corn.
Before grilling the corn, soak the unshucked corn in water. The heat will dry the silk, which will come off when you peel off the husks.
There seem to be almost as many ways to grill corn as Forrest Gump could divine about shrimp. You can grill it in the husk, wrapped in aluminum foil, bare naked right on the grill. It is such a delicious conundrum. Charles has decided that his summer project is to devise the most efficient way to roast corn, without burning his sausage fingers. Camilla pours another round of French 75s and settles into the cushions of her Adirondack chair. Charles roasting corn always makes for a lively spectator sport - without those annoying vuvuzelas!
