It's Food Friday!
Here is a recipe for home made fortune cookies. No matter where we get Chinese food the fortune cookies always seem stale. I would hate to bring stale cookies to the Year of the Rabbit festivities. I have also included some pithy quotations that you can print and include in your batch of yummy fresh cookies. Charles and Camilla had so much fun helping me choose!
3 egg whites
¾ cup white sugar
½ cup butter, melted and cooled
¼ teaspoon vanilla extract
¼ teaspoon almond extract
1 cup all-purpose flour
2 tablespoons water
Preheat the oven to 375°F. Line cookie sheets with parchment paper. Tell Camilla to print the fortunes, and then ask Charles to cut them out. (Don't play favorites.)
Let Charles whip the egg whites and the sugar in a large bowl with the electric mixer for about 2 minutes, until the whites are stiff. He will enjoy this. Then, reduce speed to low, and let Camilla stir in melted butter, vanilla, almond extract, water and flour, one at a time. The batter will be like pancake batter. Spoon the batter into 3 inch circles on the cookie sheets.
Bake for 5 to 7 minutes, until the edges begin to brown slightly. Quickly remove one at a time, place a message in the center, and fold in half. Fold the ends of the half together into a horse shoe shape. If they spring open, place them in a muffin tin to cool until set.
